

Story
The Place: Our vineyard is located in a tranquil spot in El Cepillo, Valle de Uco, with the snow-capped Andes in full view. Canopus is a ten hectare certified organic an biodynamic vineyard, marked by its calcareous soils, extreme temperatures, and erratic winds. We pay close attention to the many subtleties and nuances of the terroir with the sole purpose of giving our wines their distinct and natural character.
The Process: Our vineyard is (certified) organic and biodynamic, respecting the original conditions of each wine and with minimal intervention. In the cellar, the wines continue their natural course; without corrections or manipulations. They age in used French oak barrels, amphoras, or ceramic spheres.

Result: Without recipes and make-up free, our wines are elegant and gutsy, with silky textures. They are born from this quest for purity, precision, and detail. From the hard work and patience that goes into them and, above all, the ability to integrate the vineyard’s character and achieve the maximum purity in the grapes and their surroundings.










The low yieldingfive micro-parcels over 2 hectares of Pinot Noir are marked by the cool climate and calcium carbonate covered stones, with some patches of sedimentary calcareous layers. Soil, climate and a meticulous organic – biodynamic farming outline elegant, vibrant and silky wines, showing precision and freshness. Located at 990 meters above sea level (average altitude for Uco), the vineyard has 8 hectares of Malbec and 2 of Pinot Noir.

This wine comes to life despite the surrounding conditions. A wine that was not supposed to be, but ended up being. When the weather and its obstacles get in the way, Subversivo does not surrender, it goes all-in and takes even greater risks.







A gluglu, fun and vibrant wine made from Pinot Noir. Spritzy and with a subtle mouth-texture, the Pintom Petnat has a vivid acidity and an array of flavours and aromas combining grapefruit, citric and elderflower. Alcohol ranges from 10 to 11 percent.

This Malbec comes from different parcels and depending on the year has a percentage of a white grape variety. The wines pursue drinkability, freshness and all-occasions profile to match food or be shared as aperitif.



It taste more the cool climate and austere soils than the Malbec grape. The nose teases with a subtle herbal, fresh berries and stony aromas. It is a wine defined by mouth textures and tension, far from sweetness and voluptuous feel. Coming from Mendoza selections, the Malbec is planted in nine separated parcels, according to different combinations of sand, stone, and limestone soils.




A vibrant, terroir-transparent wine from two specific parcels, following several years of exploring its nuances. Malbec-based, this wine is fresh and delicate with a set of texture layers. We destemme in the vineyard by hand in small vats with a low percentage of whole cluster. The wine goes through an elevage of 18 to 24 months in large foudres.


NATURE
Nature is clear, trustworthy and full of grace. Nature is often harsh in the way it doesn’t care about human concerns.
A late frost, hail or heat in the vineyard can usually be a hard blow to stunned the agricultor. Yet in those hazardous times, one can feel nature shows a faithful smile. It is as if everything is marked by some form of perfection and beautiful in nature, in its diversity, its rhythm, answers and magic flow of time.



IT IS SIMPLY IN THAT THOROUGH AND DISCREET OBSERVATION ABOUT NATURE WHERE THE REFLECTION STARTS.
Observing nature here in Canopus vineyard is as permanent as enduring. Collecting dozens of roots and leafs for an herbarium brings some answers on how different botanical families affect the environment in many physical, chemical and biological manners. Or mapping the finca by different soil types, or pruning records, notes on bacterias consortiums, bees or fruit trees.
